I broke out of my hermit shell, which I’ve been living in for a while and showed up at the Grand Opening of Kam’s Roast at the Mega Fashion Hall last June 15. I first tried Kam’s Roast in Hong Kong in 2015 and left the restaurant delightfully pleased. Coming from the family behind Yung Kee Restaurant, which I absolutely love and made it to my must-eat every Hong Kong trip, it boasts of a culinary heritage that spans 75 years. Third generation Hardy Kam founded the 4-year in a row awarded Kam’s Roast goose in Hong Kong. He was present at the event last Friday, together with Robert Chua, a prominent TV and movie producer in HK with a proven track record in successful food concepts.

Poised to be this country’s go-to roast place, the dining destination is best known for mouth-watering dishes such as Kam’s Roast Duck, Suckling Pig, and Barbecued Pork. Each recipe is made from the freshest premium ingredients, delicately prepared to bring out the flavors and textures the restaurant has become famous for.

Marinated Cucumber with Vinegar and Garlic Php 220
Pickled cucumber sticks that have just the right sour tones punched by garlicky undertones. The crunch from the cucumber is a great welcoming hello to your appetite.
Jellyfish with Sesame Oil Php 350
The next blare in your mouth continues with the special textural crunch of the marinated jellyfish salad. How the Chinese figured out that these dangerous yet beautiful sea fairies glowing with trailing tentacles and mushroom bodies can be eaten in a vinegary cold dish that can be quite tasty and refreshing is beyond me.

Kam’s Roast serves century eggs as a starter with pink ginger. It’s an earthy, deeply satisfying small plate dish. Kam’s Roast and Yung Kee have the best century eggs, the outer (egg white) has this almost translucent color and jellylike consistency. It’s so delicate it feels like you’re eating a magical jelly sphere but it doesn’t fall apart. The yolk is creamy and there’s a runny middle part like a film of oil is protecting its moisture. It’s absolutely awesome and the best there is.

Hong Kong noodles are wonderful, it’s cooked al dente retaining an ironically crisp yet chewy texture as you slurp through endless eggy blonde strands dusted with briny shrimp roe.

I have to say, I wanted so badly to see goose on the menu but their roast duck made me forget the one that lays a thousand gold eggs.
Their duck’s tender, yielding meat with au jus that sweats out of the meat after surrendering in torrid heat of roasting stirs your palate with incredible cascading flavors. It bounces in the mouth and you can’t help but sigh and pause. Royalty in the mouth.
